What used to be eaten at Easter (and still somewhere is) On Wednesday before Easter Monday: peas or lentils
Thursday: meals made from eggs or potatoes, or something green(salad, spinach, Judas cakes with honey
Friday: the biggest fasting day held by the dinner of following Saturday
Saturday: dinner included Easter suffing
Sunday:young ram, potatoe salad
Easter Monday: pork, dumplins and sauerkraut
In Czech lands, Easter culminates in 40 days fasting period. Sundays during this period have their names like Black, Brown, Sneezing. Last Sunday - Flower Sunday-was celabrated for Christ came to Jerusalem, and straight after this day the big cleaning around the house had started and people were getting ready for this season holiday.

Origin and dates of EASTER

The roots of Easter are older that beggin of our era. It has risen from Jewish holidays called pesach when freedom of Judes from Egypt slavery. Every Israel's family had killed a ram, and spread its blood on the door then they had roasted and eaten it. It was believed that in the houses not signed by blood (houses of Egypt's' slavers) had died everything that has been born. Christians always tried to separate Easter from pesach, and Judes always killed a ram every 14th day in the month without worrying what day it was. Christians started to celebrate saviour on Sunday.
The German name -Ostern and English name Eastern - remind Old-Germanic godest of Spring and Fruitfulness, Ostar.
It was decided in 325 at Nikey Council that Easter should be on Sunday after first spring full moon after spring equinox. The date is than between 22nd March and 25th April. First tables with the Easter schedules in Czech had been made by an astronomer Jan Kepler.

Easter Symbols

Cake in a shape of ram is made, and means renewal of life.
The habit of eating eggs has probably something to do with fasting when eggs were not allowed, and people could not wait till fasting ends. It symbolizing the origin of life and strength.
Easter rabbit can be found already in Bible shown as a white rabbit at Virgin Maria's feet as a symbol of clearness of physical temptation.
Easter sick is made from osier, and symbolizes spring becoming younger. To hit someone with the stick means that this young nature is put one life being. Girls will be then young, fresh, healthy and happy.

Some of the recipes Easter

Stuffing (Oooo Errrrrr!!!!):

1-1,5 kg meat ( roasted pork, cooked gammon),
10 eggs,
1/2l milk,
10 white rolls,
nutmeg,
salt,
parsley

Mix yolks in milk will be poured onto cubes cut rolls, grate nutmeg over it, add both meat cube cut and green parsley., salt. The snow from white eggs is slightly nix into it.This base is put into a pan that is grease and sprinkled with crumps. Butter is put on the top and pan is ready to be put in the oven to bake.

Ram shaped cake:

¼ butter (unsalty),
vanilla sugar,
17dkg sugar,
4 eggs,
15dkg flower,
1 tea spoon of baking powder,
lemon peel,
orange peel,
2 spoons of rum

Butter with sugar mix to make a mouse, when mixing add whole eggs, flower with baking powder mixed into dough by a spoon, peel and rum in the end. The form must be greased and sprinkled by flower, pour the dough and bake about 1 hour. We may use chocolate cover or icing.

"Mazanec" cake:

1kg flour,
6dkg yeast,
16dkg sugar,
20dkg butter (unsalted),
4 egg yolks,
pinch of salt,
3/8 milk,
baking powder,
raisins,
almonds for decoration.

To make a risen dough we do not use cold ingredients, and we prepare the yeast melted in a bowl with warm milk. You may put the bowl with made dough under the covers to help it grow. Mazanec than looks like a circle bread put on baking paper, decorated with almonds and a bit of oil is spread for shining.
